Winterage Meats is a line of artisanal products inspired by the wild aromatic flavors of the Burren. We work with a small number of family farms preserving an ancient farming tradition known as Winterage - arguably one of the most sustainable forms of cattle farming in the world.
By maintaining this ancient practice that stretches back nearly 6000 years, these farmers are committed to conserving the Burren’s landscape, biodiversity, archaeology and water. As a company, Winterage Meats is passionate about elevating their story with a line of intensely flavorful, delicious products.

Our line of smoked and cured meats begin at our roots in our locally based artisanal butcher’s skillful hands. Our cures and rubs are inspired by the richly aromatic wild Burren landscape.

We are committed to working with small family farms and craft butchers to create an artisanal product, one that increases recognition of the critical role that farmers play in maintaining the unique biodiversity of the Burren.
CHEF’S CORNER
We use a combination of flavors reminiscent of festive Irish meals of the past, such as cloves and bay leaf, blending them with an aromatic mix of herbs native to the Burren region. The result is intensely flavorful dishes that allow chefs to create an experience infused with the flavors of this fertile, fragrant landscape. Our handcrafted cooking process creates a truly unique ingredient, ready to heat and serve across restaurant menus.

The wonderful thing about the winterage is that we as farmers want to put our cattle up on the hills to feed. The scientists want the cattle to clear off the grass so that the flora can bloom again next spring. All of us in society just love it because we get the glorious colours of the flowers on these hills. In order for that to happen, we need the farmer.”
